Fun Recipes 

Chocolate Covered Strawberries

STRAWBERRIES FOR YOUR SWEETHEART

 

Ingredients:

- 1 Pound fresh strawberries

- 6 oz EnjoyLife semi-sweet dark chocolate chips

- 1/2 Tablespoon of vegan butter (or coconut oil)

Instructions:

Wash and throughly dry your strawberries using a paper towel.

Melt your chocolate over a double boiler.

Fill ¼ of the pot with water.

Bring the water to a simmer over medium heat.

Add your chocolate chips and vegan butter (or coconut oil) to a separate pot or heat resistant bowl. 

Gently melt the chocolate chips, stirring regularly until the mixture is glossy and smooth.

Carefully remove the pot or bowl from the pan and set aside.

Make sure to stir constantly to ensure the chocolate is melting.

Continue stirring the chocolate so that  you don’t risk scorching the chocolate.

Now, here comes the fun part, dipping the strawberries into the chocolate.

Working quickly, hold each strawberry by the stem and dip the strawberries half way into the chocolate.

Let the excess chocolate drip from the strawberry before transferring it to the prepared baking sheet lined with the parchment paper. 

Chill the strawberries at least 20-30 minutes, or until the chocolate is completely set. 

Here are some options for decorations.  

White chocolate, mini chocolate chips, shredded coconut, crushed graham crackers, crushed granola, chopped nuts, pistachios or  pecans.

Prep Time: 20 minutes

Cook Time: 1 minute
